We freeze it solid, then draw the water out in the cold. That protects the flavour, colour and texture.

Conventional dried fruit is made with heat over several hours. Freeze-drying works differently: we deep-freeze the fruit, then draw the water out as vapour under vacuum, with no heat applied. Because the fruit is never cooked, its structure stays intact — so it stays crunchy and keeps more of its natural colour and flavour.
Three more things heat-drying can't do
Under vacuum the ice turns straight to vapour (that's sublimation), so the fruit never goes soggy. The cell walls hold their shape, which is why it stays crunchy instead of chewy.
With almost all the water removed, freeze-dried fruit is shelf-stable at room temperature — no fridge needed, and nothing added to preserve it. No added preservatives or sulphites.
Take the water out and the fruit's own natural sugars and acids concentrate. That intense hit of raspberry or banana is the fruit itself, never added sugar.
None. The only ingredient is fruit, so the sweetness is whatever the fruit brought with it.
